11/9/15 I feel lazy today

Hi, it’s Liz. Today has been a lazy day. I just feel very lazy and unmotivated today. I just haven’t had the gumption to do anything. I even did something I NEVER do – turned on the TV “for company”. Usually, I prefer the silence. Maggie must be feeling it, too, because she curled up on her blue velour blanket on the bed and slept the entire day.

One thing I did do, however, is make an eggplant parmesan. I sliced the eggplant, set them out on wire racks with paper towels underneath, and sprinkled the eggplant slices with kosher salt. I left them for several hours, letting the water leech out. I turned the slices over halfway through the waiting time (about 3 or 4 hours). If you omit this step, your eggplant will be very, very, mushy.

I heated the oil, and patted off the eggplant. I dipped the sliced vegetable in beaten egg, then flour, then Panko breadcrumbs (for crispness). Eggplant will soak up oil and get nasty if the oil isn’t heated enough. I browned the slices, then replaced them on the wire racks to let the oil drip out. They looked pretty crispy!

Once the eggplant was drained, I put a small amount of sauce in the bottom of a casserole. I placed four pieces of eggplant in the bottom, then added fresh basil leaves, mozzarella cheese, and sauce. I had sixteen pieces of eggplant and did these layers four times to use up all the vegetable. I then baked the eggplant at 350 degrees for about an hour, covered. Here is the result:

I made a side of pasta with marinara sauce to go with the eggplant.

Other than that…I think I made the bed around Maggie.

9/4/13 Laaazy

So. Lazy. Today.  Maybe it’s because I spent such an enormous amount of energy as my alter-ego, The Hairy Bullet, yesterday; streaking like a rocket through the house and upending lamps, tearing up the rugs, spilling my water bowl, destroying the toys, you name it.

I’m exhausted.

Mom and Dad went to the store and left me sleeping on the human bed.  When they came back, I heard the door and went downstairs, yawning and stretching the whole way.  I kinda half-wagged my tail in a, “you mean, it’s time to wake up?” manner.  Mom went upstairs and checked for any “surprises” and told Dad, “There’s a huge indentation in the bed where she was sleeping and the covers are all rumpled up where she made a nest.”  Honestly, I slept the whole time they were gone.

I slept before Laurel came over to take me for a walk.  I slept after the walk.  Then I begged to go back on the human bed most of the night. 

(Yawn) I’d write more, but I think it’s time for bed!
